Tombacco Biferno
This wine is generally full-bodied and structured with velvety texture and balanced acidity. As a Riserva, it undergoes extended aging to develop complexity and depth, producing a rich and elegant profile with concentrated fruit and refined tannins.
Winemaking process
The grapes are grown in Molise’s Campobasso province on limestone and clay soils. After fermentation with controlled temperatures and maceration, the wine undergoes malolactic fermentation and is aged for an extended period (often about three years) in stainless steel and oak tonneaux to develop complexity and balance.
Tasting notes
It typically shows deep ruby color with garnet reflections. Aromas often include ripe blackberry, dark cherry, plum, leather, and baking spices, sometimes with hints of vanilla, cocoa, or dried herbs. On the palate, it is rich and smooth with dark fruit flavors, integrated oak influence, and a long, persistent finish.
Food pairings
Tombacco Biferno pairs well with roasted meats, braised dishes, game, aged cheeses, and hearty pasta. Its structure and concentration complement rich and savory foods.
