Bourgogne Blanc Tradition
A generous Chardonnay meant to feel like an everyday expression of Burgundy—ripe-fruited, juicy, and anchored by the rocky, limestone character that defines these Mâconnais hillside sites.
Winemaking process
After harvest, the grapes are loaded by gravity into pneumatic presses, with a slow, extended pressing designed to preserve aromatic finesse. The must is then cooled and clarified by settling. Fermentation happens either in temperature-controlled stainless steel or partly in wood (about 20%, with under 10% new barrels). Malolactic fermentation is optional depending on the vintage, and the wine rests on fine lees until spring. Additives—like SO₂—are kept to a minimum from harvest to bottling.
Tasting notes
Pale yellow in the glass, with aromas that lean into toasted cereals and white peach, wrapped in a creamy feel. The palate stays juicy and flavorful, with a chewy texture and a finish that carries with good length.
Food pairings
Aperitif with gougères or parsley ham; cream-based dishes; goat cheese.
