Origin & Viticulture
From ungrafted, old-vine Airén in the limestone soils of Castilla-La Mancha.
Managed organically, as part of Verum’s ULTERIOR project to revive heritage varieties and adapt to climate change ■.
Vinification & Aging
Fermented in Tinadas (large mud/clay vats) for 4 months on lees, then rested a further 4 months in stainless steel, imparting minerality and freshness â– .

Color: Pale straw.
Aroma: Bright orchard and citrus fruit with herbal hints and a notable salty-mineral touch—“salty minerality that almost leaps out of the glass” ■.
