Tombacco | Azurra 2021
A powerful southern Italian red blend dominated by Primitivo with a portion of Negroamaro, offering deep color, intense fruit concentration, and a rich, structured style. The wine reflects Puglia’s warm Mediterranean climate, showing ripe fruit intensity, warmth, and a smooth, full-bodied character balanced by fresh acidity.
Winemaking process
Tombacco Azzurra is produced primarily from Primitivo (about 80–90%) with a smaller portion of Negroamaro grown in Puglia. Fermentation occurs at controlled temperatures between about 24–28°C with regular pumping over to extract color and structure, followed by malolactic fermentation. The wine is then refined in a combination of large oak barrels and tonneaux before bottling, a process that enhances texture, complexity, and the wine’s rich character.
Tasting notes
The wine shows intense aromas of morello cherry, blackberry, and plum with layers of rosemary, pepper, vanilla, and chocolate from oak aging. On the palate it is dense and warm with abundant fruit, silky texture, and soft tannins, finishing full and round with persistent notes of cherry and spice.
Food pairings
This wine pairs well with roasted or grilled red meats, braised dishes, lamb, and hearty Mediterranean cuisine, as well as aged cheeses. Its rich structure and high alcohol make it especially suited for robust, savory dishes and slow-cooked preparations.
