L'insolito
A medium-bodied aromatic white wine from southern Italy made from the native Minutolo grape (historically linked to Fiano). The wine shows bright acidity, fresh fruit character, and a crisp, elegant style that reflects the coastal climate and calcareous soils of Puglia.
Winemaking process
L’Insolito 2018 is produced from 100% Minutolo grapes grown near the Gargano coast in Cerignola on predominantly calcareous soils. The grapes are hand-harvested and placed in cold storage for about 24 hours to preserve aromatic compounds, then gently pressed without destemming. After brief clarification, fermentation takes place at low temperatures (about 12–14°C) to maintain freshness, aromatic intensity, and varietal expression.
